A Heartfelt Pumpkin Bread Recipe

October 14, 2024

As the crisp air of autumn rolls in, there’s nothing quite like the comforting aroma of pumpkin wafting through your home. This month, we are highlighting a recipe provided by April Richard, Director of Corporate and Foundation Relations. This recipe holds a special place in her heart, woven into the fabric of cherished memories with a dear mentor and friend. Each time she bakes it, she’s not just following a recipe; she’s honoring a beautiful bond, filled with love, laughter, and delicious moments.

The Story Behind the Recipe

When asked what makes this recipe special to April, she shared, “This is a recipe that has been shared with members of my mentor’s own family, and one that I've perfected and now share with people I love as well. It is especially important to me now because she is currently managing cognitive decline which as it progresses makes it more difficult to recall old recipes or fun times.”

She continued, “As my mentor navigates the challenges of cognitive decline, I treasure our time together even more. Each year, I find myself asking her for the recipe—even though I know it by heart. Miraculously, she can still recall it, guiding me through each step with the same enthusiasm and joy she always has. These baking sessions have become a beautiful way for us to connect, reminiscing about happier times while creating something delicious together.”

Tips for a Perfect Bake

When it comes to making this pumpkin bread, doubling the recipe is essential. Why? Because it’s just too good not to share! Bake two loaves: one for yourself and one to give away. There’s a special joy in sharing homemade treats with others, and trust me, this bread is bound to brighten someone’s day.

To create the perfect ambiance while you bake, April recommend lighting a fall-scented candle. Her favorites are Sweet Cinnamon Pumpkin or Cinnamon Sugar Pecan from Bath & Body Works. The warm, cozy scents will envelop your kitchen, making the experience even more delightful.

2 ½ cups of flour

3 cups of sugar

2 tsp of baking soda

2 tsp of cinnamon

1 tsp of salt

1 tsp of nutmeg

½ tsp of cloves (ground)

1 cup of melted margarine

2 cups of pumpkin puree

2/3 cup of water
