Recipe of the Month: Roasted Lemon Garlic Brussels Sprouts

As a working mom and nutritionist, Seanna Marceaux MS RDN LD, Chief Strategy & Impact Officer, is always on the lookout for recipes that are both nutritious and easy to whip up in a pinch. She shared one of her go-to side dishes: Roasted Lemon Garlic Brussels Sprouts. This dish has become a staple in her household, and for good reason!

We asked Seanna why she loves this recipe, and below are her top 3 reasons.

1. Nutrient-Packed Powerhouse: Brussels sprouts are a nutritional goldmine. While they are rich in several vitamins, minerals and fiber, what makes these veggies so powerful is their antioxidant capacity. Being part of the cruciferous vegetable family, (along with broccoli, cauliflower, cabbage, and kale) Brussels sprouts contain anti-cancer compounds.  As a busy mom, Seanna appreciates how this vegetable can help boost her family’s immune systems and overall health.

2. Simple Prep and Leftover Galore: Seanna is all about recipes that don’t require hours in the kitchen and if you can prep enough to last a few days, the better! This recipe is a breeze. Just trim and slice the sprouts, toss them with lemon slices, garlic, and a bit of olive oil, and let the oven do the work. The result? A dish that’s bursting with fresh, tangy flavor and crispy goodness.

3. Family-Friendly: Seanna knows firsthand that getting kids to eat their veggies can be a challenge. But the combination of zesty lemon and sweet, nutty garlic makes these Brussels sprouts irresistible—even to picky eaters. Her little ones actually look forward to this side dish- well at least one of them does (she says she’s still working on it)!

Ingredients

2 lb Brussels sprouts, trimmed and sliced

3 tbsp olive oil

4 garlic cloves, minced

1 lemon thinly sliced

Salt and pepper to taste

2 tbsp feta cheese (optional garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F. This high heat will ensure that your Brussels sprouts get perfectly crispy on the outside while remaining tender inside.

Prepare the Brussels Sprouts: Trim the ends off the Brussels sprouts and slice them. This helps them cook more evenly and allows the flavors to penetrate better. Time saving tip—wash, trim and slice the sprouts on the weekend, place in a gallon Ziplock bag with a paper towel lining the bag to remove moisture and store in the fridge until ready to cook.

Season: On a baking sheet, toss the Brussels sprouts with olive oil, minced garlic, thinly sliced lemon, salt, and pepper. Massage the ingredients to make sure every sprout is coated evenly.

Roast: For extra crispiness, make sure the brussels sprouts are not overcrowded. Roast in the preheated oven for about 20-25 minutes, or until they’re golden brown and crispy on the edges. Halfway through, give them a stir to ensure even cooking.

Finish and Enjoy: Once they’re done roasting, remove from the oven. Serve your zesty roasted Brussels sprouts warm. Sprinkle a little feta on top for an extra creamy tang. They make a perfect side dish for any meal or a tasty addition to a holiday feast.
